Amaranth flour - Amaranth flour can be combined with other types of flours. If used in bread, the flour needs to be combined with another type of flour in order for the bread to rise; for non-rising breads like biscuits, amaranth flour can be used alone. It is gluten free by nature.

Chia flour - Chia flour is soft and fluffy with a light nutty flavor. It’s a good emulsifier, a few spoons added to a recipe is enough to bind everything together. This is why chia flour is sometimes used as a egg replacer.

Corn flour - Can be used as a replacer for wheat flour and is suitable in both sweet- as well as savory baking. Corn flour hasn't got good raising properties so best to mix with another type fo flour for bread.

Tigernut flour - Tigernut flour is made by milling the tigernut/chufa. Which in fact isn’t a nut but a tuber. They originate from North Africa. In Spain they’re made to prepare Horchata, a national (summer) drink. It’s sweet and nutty in taste, best too be compared with almonds, yet a bit grittier. It’s an all-rounder for baking. Given the fact it’s sweet you can add less sugar.

Psyllium husk powder - Since psyllium fiber is a soluble fiber, it becomes gelatinous and sticky in water. Researchers have found that by simply adding up to 5 percent of psyllium, they could improve the baking characteristics of bread.
