  • Teff flour (brown or white) -Teff is an ancient grain originating from Ethiopia and is milled as a whole grain. It’s rich in flavor, a bit like hazelnuts.

  • Tigernut flour - Tigernut flour is made by milling the tigernut/chufa. Which in fact isn’t a nut but a tuber. They originate from North Africa. In Spain they’re made to prepare Horchata, a national (summer) drink. It’s sweet and nutty in taste, best too be compared with almonds, yet a bit grittier. It’s an all-rounder for baking. Given the fact it’s sweet you can add less sugar.
